Over the years, one of the recipe’s that has been extremely handy is cake mix chocolate chip cookie bars. It’s a recipe that was given to me, along with many other recipes, at my wedding shower.
There is a good chance that you could find this in just about any church cookbook. Or maybe your friend’s mom always made these awesome treats that she served warm from the oven. Which is when they are best, of course!
This recipe is great for when you need something sweet but don’t have a lot of time. You know, like when you suddenly remember that you signed up to bring treats to your church group tonight. Not that that has ever happened to me. 😉
Easy Chocolate Chip Cake Mix Bars:
Quick and easy chocolate chip bars your kids or friends will love!
Ingredients:
- 1 yellow cake mix (approx. 15 oz box)
- 2 eggs
- 1/2 cup of vegetable oil
- 3 tablespoons of water
- 1-2 Cups of chocolate chips
Directions:
In a large bowl, mix together the cake mix, eggs, vegetable oil, and water until the mixture is moist and evenly distributed. Stir in the chocolate chips. Scrape the mixture into an ungreased 9 x 13 cake pan and bake at 350º until the edges start to turn golden brown (approx. 15-20 minutes). If you like your bars less gooey, bake until middle is golden as well.
Tip: These can dry out quickly. Bake in a pan with a tightly fitting lid. It helps to put the lid on after they’ve cooled a bit, but still quite warm.

Don’t be afraid to experiment!
It’s a cake mix. Why not try other kinds of cake mix? Try it with chocolate cake mix and white chocolate chips! Or perhaps with funfetti.
Put in more or less chocolate chips. My husband likes a lot of them, I prefer less.
Experiment with when to take them out of the oven to achieve desired gooeyness! In my family, gooey is good!
